Preparation

Add carrots, onions, celery, cilantro, garlic, ginger, turmeric, and jalapeño to a food processor. Pulse until finely chopped (but not puréed).

Add white beans, oats, chia, hemp, cumin, coconut aminos, lemon juice, and tomato paste. Process until smooth but not liquified. Refrigerate mixture for 1 hour to firm up.

Preheat oven to 190°C (375°F). Line a baking sheet with parchment paper. Scoop ½-cup portions and shape into 8 patties (~1-inch thick). Bake for 45-50 minutes until golden and firm.

Place patties on gluten-free buns with lettuce, tomato, and onion.
