Preparation
Preheat oven to 180°C (350°F). Line or lightly grease a muffin tin or small baking tray. Grate the apples, then gently squeeze out a little moisture with a towel.
Mash bananas in a bowl until smooth. Stir in the almond milk and vanilla. Add dry ingredients; coconut flour, baking powder, cinnamon, and salt. Stir until combined. Fold in the grated apple and chopped dark chocolate. The batter will be thick; this is normal.
Spoon the mixture into 6 muffin cups or shape into rustic mini bites. Bake for 18–22 minutes until golden and set. A toothpick should come out clean. Cool for 10 minutes, then enjoy warm or chilled!
