Preparation
Line the bottom of an 18 cm springform pan with baking paper. In a food processor, combine dates, coconut flakes, carob flour, and olive oil. Blend until crumbly. Slowly add hot water a little at a time until a thick, sticky dough forms. You may not need all the water.
Press the mixture evenly into the base of the pan. Use a spoon or spatula to smooth it. Place in the freezer while you prepare the filling.
Rinse and dry the food processor bowl. Add soaked cashews, coconut cream (use only the thick part if separated), beetroot powder, cacao, maple syrup, and vanilla. Blend on high for 1–3 minutes until completely smooth and creamy. Scrape down sides as needed.
Pour over the base and smooth the top. Cover with foil and refrigerate for 6–8 hours, or until firm.
