In a glass or bowl, add a layer of coconut yoghurt, and spoon in chilled quinoa mixed with flax and chia. Add berries and swirl in the salted caramel tahini.

Repeat layers until full. top with berries, a drizzle of leftover tahini sauce, and optional cacao nibs or pumpkin seeds.

Preparation

Preheat oven to 180°C (350°F). Line or grease a muffin tray.

In a small bowl, mix flaxseed with 30 ml water. Let sit for 5 minutes.

In a large bowl, combine chickpea flour, oat flour, nutritional yeast, baking powder, baking soda, garlic powder, onion powder, paprika, and salt.

Add grated carrot, chopped spinach, cooked lentils, sun-dried tomatoes, and mix well.

Add flax egg, olive oil, apple cider vinegar, and plant milk. Stir until just combined.

Divide batter evenly into 6 muffin cups. Sprinkle mixed seeds on top.

Bake for 25–30 minutes, or until a toothpick comes out clean. Let cool in the tin for 5 minutes, then transfer to a wire rack.

Preparation

Wrap tofu in a clean towel and place a heavy object on top. Press for at least 10–15 minutes to remove excess water. This helps it crisp up better. After pressing, cube the tofu and toss with olive oil, tamari, garlic powder, nutritional yeast, thyme, salt, and pepper. Pan-fry or bake at 200°C (392°F) for 20 minutes until golden and crispy.

Lightly massage kale and romaine with a pinch of salt to soften and mellow their flavour.

Whisk together tahini, lemon juice, date syrup, and water until smooth and creamy. Adjust water for desired thickness.

In a large bowl, combine greens, chickpeas, tomatoes, avocado, tofu, sunflower seeds, and hemp seeds. Drizzle with dressing and gently toss to coat.
