Preparation

1. If the dates are dry, soak them in warm water for 5–10 minutes, then drain them before use.
2. Add the cashews and gluten-free and organic oat flakes to a food processor.
3. Blend until finely ground, resembling a coarse flour.
Add Dates and Vanilla
4. Add the pitted dates and ground vanilla to the food processor.
5. Blend until the mixture becomes sticky and forms a dough-like consistency. If the dough feels too dry, add 1–2 teaspoons of water.
6. Transfer the dough to a small bowl and stir or knead in the cacao nibs until evenly distributed.
7. Roll the dough into 12 small balls, about 1 tablespoon of dough per ball.
8. Place the balls on a plate or store them in an airtight container.
9. Refrigerate the balls for at least 30 minutes for a firmer texture, or enjoy them right away at room temperature.
