Preparation

1. Massage the kale with a pinch of salt and 1 tablespoon of lemon juice until it softens. Set aside.

2. Heat 1 teaspoon of coconut oil in a pan over medium heat.

3. Add romanesco florets and sauté for 5 minutes.

4. Add the bell peppers and cook for another 3–4 minutes until both are tender but still slightly crisp. Sprinkle with sea salt and turmeric.

5. In a small bowl, whisk tahini, the remaining lemon juice, and 1–2 tablespoons of water until smooth and creamy.

6. In a large bowl, combine the kale, sautéed romanesco, bell peppers, carrot, and kimchi.

7. Drizzle the tahini dressing over the salad and toss gently to combine.

8. Sprinkle with hemp seeds and serve immediately.
