Preparation

Preheat oven to 200°C (fan 180°C) and line a baking tray. Blend soaked macadamia nuts, lemon juice, nutritional yeast, garlic, water, and salt until smooth but slightly textured. Adjust water for desired consistency. Set aside 100g for the recipe.

In a bowl, mix macadamia ricotta, sun-dried tomatoes, crumbled falafel, olives, paprika, cumin, garlic powder, herbs, salt, and pepper until evenly combined.

Unroll the gluten free puff pastry sheet. Spread the filling mixture evenly, leaving a 1cm border around the edges. Starting from the long edge, gently roll into a tight log (like a Swiss roll).

Note: If the gluten-free version of the brand I’ve recommended isn’t available, feel free to choose a gluten-free alternative from another trusted brand. As a holistic nutritionist, I recommend opting for gluten-free options whenever possible to support better digestion, reduce inflammation, and promote overall well-being.

Cut the log into 10 slices, about 2–3 cm thick, and lay them flat on the lined tray. Brush with olive oil and sprinkle with sunflower seeds.

Bake for 20–25 minutes or until golden and crisp. Cool slightly and serve warm or at room temperature. Optional: Add dried herbs or chilli flakes if desired.
