Preparation

1. Heat olive oil in a pan over medium heat. Sauté onion, garlic, and ginger for 2 minutes until fragrant.

2. Add carrot and chickpeas, cooking for 3–4 minutes.
Stir in curry powder and turmeric, cooking for 1 minute to release the spices’ aroma.

3. Pour in coconut milk and simmer for 8–10 minutes, until the carrot is tender.

4. Add spinach and cook for 1 minute until wilted. Stir in lemon juice and season with salt before serving.
